Doña Flavia & San Lucas’s philosophy is that we are sharing our food in the spirit of our ancestors with our special guests. This is the staple ingredient to the evolution of our menu and cooking style.
Our menu originally evolved when Flavia returned to Copán and rediscovered the culinary wonders that her father so boasted about and missed while living in the city.
By adapting the local, authentic Maya dishes & recipes, and also bringing the traditions and secrets of great family cooks - a very unique fusion Maya cuisine evolved. It is characterized by fresh daily produce and menus that change seasonally.

At the Hacienda San Lucas kitchen, local Maya traditional food bases - maize, squash, and beans - meet new and old world cooking techniques ... in a wood fire hearth. Our original kitchen is faithful to the Maya tradition and sacredness of smoke as a conduit to the Gods - the Maya believed that smoke carries the offering that transforms the spirit of what is in the essence of the physical realm into pure spirit so it can be received by the Gods.
